Ottoman Palace Cuisine Course of the Culinary Program Featured in National Media
On March 11, 2025, during the Ottoman Cuisine course taught by Lecturer Sedat KOCADOĞAN, a faculty member of our school's Department of Hotel, Restaurant, and Catering Services – Culinary Program, recipes and cooking techniques extracted from historical sources dating from the 15th to the 19th century were taught.
While preparing a modern interpretation of Ballı Mahmudiye, a dish from the 15th-century Classical Period of the Ottoman Palace Cuisine, together with culinary program students, TRT-Haber and Anadolu Agency reporters recorded the session.
This royal dish, revived through the examination of remaining Ottoman sources and adapted to contemporary techniques, was featured in their news bulletins.
